Ingredients

  • 1 lb dried assorted fruit (e.g. raisins, cherries, etc.)
  • 1½ cups brewed tea
  • 1 lb all-purpose flour
  • 6 tbsp brown sugar
  • 1 egg, beaten
  • 1 tbsp mixed spice
  • 2 tbsp jam

Directions

  1. Soak the fruit in the tea for 24 hours
  2. Mix flour, sugar, egg, spice, fruit, and jam in bowl to make a batter.
  3. Spoon batter into a loaf tin and bake for 45 minutes at 325°F.
  4. Let cool, remove from tin, and glaze with honey.
