Ingredients

  • 1 can (20 ounces / 600 ml) pineapple chunks
  • ½ cup white granulated sugar
  • 3 tablespoons flour
  • ¼ cup butter, melted
  • 1½ cups shredded cheddar cheese, divided
  • ⅔ cup coarsely crushed saltines (14 crackers)

Directions

  1. Preheat oven to 350°F (175˚C).
  2. Grease a 1½ quart (1½ liter) baking dish.
  3. Drain the pineapple, reserving ¼ cup juice; set aside.
  4. In a small bowl, combine sugar and flour.
  5. Add the butter and 1 cup cheese; mix well.
  6. Gently stir in pineapple.
  7. Pour into the prepared baking dish.
  8. Sprinkle crushed crackers on top; drizzle with reserved pineapple juice.
  9. Bake, uncovered, for 30–35 minutes or until bubbly around the edges.
  10. Remove from oven and sprinkle with remaining cheese.
