Marinated Mackerel

Ingredients
- 4 or more mackerels
- 2 fresh bay leaves, chopped
- 6 cloves
- 1 blade of mace
- 1 sprig of fresh thyme
- 1 onion, chopped
- 10 peppercorns
- Salt
- Malt vinegar
Directions
- Clean and scale fish. Place in a baking dish large enough for the fish and vinegar.
- Mix other ingredients, except vinegar, with salt to taste, and pour over fish.
- Pour over enough vinegar to cover well.
- Place in moderate oven for 40–50 minutes.
- Lift fish carefully onto serving dish, and strain liquor over top.
- Let cool and serve.
