Ingredients

  • 4 or more mackerels
  • 2 fresh bay leaves, chopped
  • 6 cloves
  • 1 blade of mace
  • 1 sprig of fresh thyme
  • 1 onion, chopped
  • 10 peppercorns
  • Salt
  • Malt vinegar

Directions

  1. Clean and scale fish. Place in a baking dish large enough for the fish and vinegar.
  2. Mix other ingredients, except vinegar, with salt to taste, and pour over fish.
  3. Pour over enough vinegar to cover well.
  4. Place in moderate oven for 40–50 minutes.
  5. Lift fish carefully onto serving dish, and strain liquor over top.
  6. Let cool and serve.
