Ingredients

Base

  • 2 cups (480 ml) all-purpose flour
  • ¾ cup (180 ml) powdered sugar
  • 1 cup (240 ml/g) margarine (softened)

Topping

  • 4 eggs
  • ⅓ cup (80 ml) lemon juice
  • 1 ½ cup (360 ml) white sugar
  • ¼ cup (60 ml) all-purpose flour
  • 1 teaspoon (5 ml) baking soda
  • 1 tablespoon (15 ml) grated lemon peel (zest)
  • Powdered sugar, as needed

Directions

Base

  1. Combine flour and sugar in a medium mixing bowl.
  2. Cut in margarine until mixture resembles fine crumbs.
  3. Press firmly into a greased square (8 x 8 or 9 x 9-inch) pan.
  4. Bake at 350°F (180°C) for about 20–30 minutes, until lightly browned. Prepare the topping in the meantime.

Topping

  1. Beat eggs in large mixing bowl until frothy. Stir in the lemon juice and rind.
  2. In another bowl, stir together the sugar, flour, and baking powder.
  3. Add dry mixture to wet mixture. Stir until just moistened.
  4. Spread evenly over the hot base, and return to oven to bake for 20–25 minutes, or until set.
  5. Let squares cool before removing from pan and cutting. Dust with powdered sugar.
