Ingredients

  • 2 teaspoons olive oil
  • 1 teaspoon cumin
  • ½ cup raisins
  • ¼ cup cashews
  • 2 cups basmati rice
  • 4 cups water

Directions

  1. Heat the olive oil in a pot.
  2. Add the cumin, then the raisins and cashews. Sauté for two minutes.
  3. Add the rice, and sauté for another minute.
  4. Add water, and bring everything to a boil.
  5. Lower the heat, cover, and cook for 12 minutes.

Notes

Basmati rice is recommended, as other types may turn out poorly. Do not use Italian risotto rice, or any sticky rice.
