Ingredients: 900 g (2 lbs) fresh spinach or 580 g (20 oz) frozen, thawed, and drained spinach; 1 large onion, finely chopped; ¼ cup extra-virgin olive oil; 1 cup chopped scallions; ½ cup minced fresh parsley; 1 tbsp minced fresh dill; ¼ tsp freshly ground nutmeg; 1 tbsp lemon juice; ¾ cup crumbled feta cheese; ¾ cup small curd cottage cheese; ¼ cup freshly grated parmesan cheese; 4 eggs, beaten; 12–20 sheets phyllo pastry; ⅔ cup clarified butter; ¼ tsp freshly-ground black pepper; ½ tsp salt (or to taste)
