Ingredients: 1 cucumber, chopped in 1 cm cubes; 1 tomato, chopped in 1 cm cubes; 1 onion, chopped in 1 cm cubes; ¼ cup chopped parsley; 2 tbsp oil; 2 tbsp lemon juice or vinegar; ½ tsp salt; ½ tsp freshly-ground black pepper; 1 tsp za'atar (can substitute ¼ tsp thyme)
