Ingredients

  • ¼ cup tomato sauce
  • Salt, pepper, and other seasonings to taste (see tips below)
  • Cooking spray
  • 2 eggs
  • 2 tablespoons chopped green bell peppers
  • 2 tablespoons chopped mushrooms
  • ¼ cup shredded mozzarella cheese

Directions

  1. Mix spices and tomato sauce and allow to meld flavors while preparing the rest of the recipe.
  2. Beat eggs well.
  3. Heat a small skillet over low heat, sprayed with cooking spray.
  4. Pour beaten eggs into skillet, then cover skillet.
  5. Cook for 3 minutes. Eggs should be almost set.
  6. Carefully flip omelet over. Cook another minute.
  7. Combine mushrooms and peppers and cook 30 seconds in microwave oven.
  8. Spread tomato-spice mix over omelet. Sprinkle cheese over tomato sauce. Top cheese with hot mushrooms and peppers.
  9. Cover skillet. Cook another 2 minutes. Cheese should be melted.

Notes

Basil, crushed red pepper, and oregano work well.
