Ingredients

  • 2 cups grated cassava
  • 1 egg, lightly beaten
  • 1 onion, finely chopped
  • 2 green chiles (optional, for heat), finely chopped
  • 2 tablespoons cornmeal
  • Salt, to taste
  • Vegetable oil, for frying

Directions

  1. In a mixing bowl, combine the grated cassava, beaten egg, finely chopped onion, and finely chopped green chilies (if using).
  2. Add the cornmeal to the mixture and mix well until everything is evenly combined.
  3. Season the mixture with salt to taste. Adjust the seasoning according to your preference.
  4. In a frying pan, heat vegetable oil over medium-high heat.
  5. Take spoonfuls of the cassava mixture and carefully drop them into the hot oil. Flatten the fritters slightly with the back of the spoon.
  6. Fry the fritters until they are golden brown and crispy on both sides. Use a slotted spoon to remove them from the oil and place them on paper towels to drain any excess oil.
  7. Repeat the frying process with the remaining cassava mixture.
  8. Allow the fritters to cool slightly before serving.

Notes

You can add grated coconut or grated sweet potato to the cassava mixture for additional flavor and texture.

For a sweeter version, you can add a bit of sugar to the mixture.

These fritters can be served with a dipping sauce or enjoyed on their own.

Mbatata a matenda goes well with a cup of hot tea or as a side snack during gatherings and celebrations.
