Ingredients

  • 2 whole lemons, washed
  • 4 whole limes, washed
  • ½ cup (120 ml) white sugar
  • 4 tsp (20 ml) lime juice
  • Carbonated water, as needed

Directions

  1. Remove the zest from the lemons and limes in strips, leaving behind the bitter white pith.
  2. Combine the sugar and zest in a container, and let this sit in the fridge for 24 hours. The sugar will extract the liquid from the citrus peels and produce a syrupy liquid.
  3. Strain the solids out of the peel and sugar mixture.
  4. Mix the peel and sugar mixture with lime juice. This should produce slightly under ½ cup (120 ml) of syrup.
  5. To make the finished soda, mix 1 volume of syrup with 5 volumes of carbonated water.

Notes

Use water from a carbonating machine or a brand of pure carbonated water such as Polar Original Sparkling Water, Great Value Seltzer Water, or Signature Select Seltzer Water. Do not use a brand of mineral water such as Perrier, San Pellegrino, or Mineragua because the added minerals will ruin the taste. Avoid flavored sparkling water such as La Croix or Spindrift because the preexisting fruit flavors will ruin the drink.

You can make a Shirley Temple by mixing five crushed frozen cherries with the zest and sugar or by adding a volume of grenadine syrup for every volume of lemon-lime syrup when making the finished soda.
