Ingredients

  • 1 onion
  • 1 can of tomato beans
  • 1 pack (150 g) of bacon
  • 4 slices of whole-wheat bread
  • Margarine
  • 4 eggs
  • Pickled jalapenos (the kind you have on tacos)
  • Shredded cheese

Directions

Side dishes

  1. Chop and fry the onions, then set aside.
  2. Warm the tomato beans over medium heat.
  3. Fry the bacon and set it aside. Reserve the bacon grease.

Eggs

  1. Slice the bread and apply margarine generously.
  2. Heat a frying pan with the bacon grease.
  3. Start frying 2 eggs. Do not crack the yolk.
  4. When the eggs are nearly done, draw aside the egg white so the yolk is clear.
  5. Chop the pickled jalapeños and spread them over the eggs. Add some of the pickle juice as well.
  6. Sprinkle some cheese over the eggs.
  7. Put a lid over the frying pan and let the cheese melt.
  8. Serve the eggs on the bread with the onions, tomato beans, and bacon.
