Ingredients

  • 1 tsp ground black pepper
  • ¼ cup (60 ml) water
  • ¼ cup (60 ml) granulated white sugar
  • 1 tsp lemon juice (optional)

Directions

  1. Combine pepper, water, sugar and lemon in a saucepan, and heat slowly until the sugar dissolves and the mixture is a light-brown colour.
  2. Remove from heat and let cool for 1 hour.

Notes

The lemon juice can be replaced by lemon rind, or lime.

Makes a good sauce for fresh fruit or fruit with soured cream.
