Cream of tartar versus baking powder in snickerdoodles

Our opening Recipe Git story gives us a clean comparison.

The original Snickerdoodles use 1 teaspoon baking soda plus 2 teaspoons cream of tartar. The no-cream-of-tartar fork replaces both with 2 teaspoons baking powder.

That change can affect tang, spread, lift, browning, and texture. Both versions are still marked untested, so we are documenting the theory without pretending we have bake results.

Which differences would you watch for in a side-by-side batch?
